Receip- Strawberry Cream Pie
Ingredients:
- For the Crust:
- 1 ½ cups graham cracker crumbs (about 12 whole graham crackers)
- ¼ cup granulated sugar
- ⅓ cup melted butter
- For the Filling:
- 2 cups fresh strawberries, sliced
- 1 cup heavy cream
- 1 cup whole milk
- ½ cup granulated sugar
- 3 large egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- For the Topping:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Fresh strawberries for garnish
How to make:
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
- Press the mixture into the bottom and up the sides of a 9-inch pie dish.
- Bake for 8-10 minutes until set and slightly golden. Let it cool completely.
- Prepare the Filling:
- In a saucepan, combine 1 cup of sliced strawberries with ¼ cup of sugar. Cook over medium heat until the strawberries release their juices and the mixture starts to thicken. Remove from heat and let cool.
- In a separate bowl, whisk together egg yolks, cornstarch, and ¼ cup of sugar.
- Heat the milk in a saucepan over medium heat until it just starts to simmer. Gradually whisk it into the egg yolk mixture.
- Pour the mixture back into the saucepan and cook over medium heat, whisking constantly until it thickens and starts to bubble.
- Remove from heat and stir in vanilla extract.
- Fold the strawberry mixture into the custard. Let it cool slightly before pouring it into the cooled pie crust.
- Prepare the Topping:
- In a mixing bowl, beat the cream with powdered sugar until stiff peaks form.
- Spread the whipped cream over the strawberry custard layer in the pie.
