Homemade Vegetable Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 4 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale (optional)
  • Fresh herbs for garnish (optional)

How to make:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Stir in the carrots and celery, cooking for about 5 minutes until slightly softened.
  3. Add the bell pepper, zucchini, and green beans. Cook for another 5 minutes, stirring occasionally.
  4. Pour in the diced tomatoes and vegetable broth. Stir in the thyme, basil, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-30 minutes until the vegetables are tender.
  6. If using spinach or kale, stir it in just a few minutes before serving until wilted.
  7. Ladle the soup into bowls, and garnish with fresh herbs if desired.

Homemade Chicken Soup Recipe

Ingredients:

  • 2 tablespoons olive oil

  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 8 cups chicken broth
  • 1 bay leaf

  • 1 cup egg noodles or any pasta (optional)

How to make:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Stir in the carrots and celery, cooking for about 5 minutes until they start to soften.
  3. Place the chicken breasts or thighs in the pot. Pour in the chicken broth and add the bay leaf, thyme, parsley, salt, and pepper.
  4. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 20-30 minutes until the chicken is cooked through.
  5. Remove the chicken from the pot and let it cool slightly. Shred the chicken using two forks and return it to the pot.
  6. If using, add the egg noodles or pasta to the soup and cook according to the package instructions until tender.
  7. Taste and adjust seasoning as needed. Remove the bay leaf before serving. Garnish with fresh parsley if desired.
