 Ingredients:

  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/8 teaspoon salt
  • 2 3/4 cups whole milk
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions:

  • In a saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until well combined.
  • Gradually whisk in the milk, making sure there are no lumps. Place the saucepan over medium heat.
  • Cook the mixture over medium heat, stirring constantly with a whisk, until it thickens and comes to a boil. This usually takes about 8-10 minutes.
  • In a separate bowl, whisk the egg yolks. Gradually add about 1 cup of the hot cocoa mixture into the egg yolks, whisking constantly.
  • Pour the tempered egg mixture back into the saucepan with the rest of the cocoa mixture, whisking constantly. Cook over medium heat, stirring constantly, until the pudding thickens further and coats the back of a spoon, about 2-3 minutes.
  • Remove the saucepan from the heat. Stir in the butter and vanilla extract until the butter is melted and well combined.
  • Pour the pudding into serving dishes or a large bowl. Place plastic wrap directly on the surface of the pudding to prevent skin from forming. Chill in the refrigerator for at least 2 hours or until completely chilled and set.
  • Serve chilled, optionally with whipped cream or chocolate shavings on top.
